Recipes for Week 2

Jill, here are the recipes I use for my week 2 dinner menu. See what a good friend I am? Now you have to share some recipes with me! ;-)

Texas Haystacks
1 lb ground beef, cooked and drained
1 can tomato soup
1 can chili (we prefer no beans, but you can use either kind)
Serve over fritos or tortilla chips. Top with shredded cheese, lettuce, tomatoes, and ranch dressing.

Albino BBQ Chicken
1 c. ranch dressing (or ceasar dressing)
1 c. italian dressing
2 lbs. chicken breasts
Marinate chicken in dressing and grill.

Sloppy Joes
1 lb ground beef, cooked and drained
1 can tomato soup
1/2 c. BBQ sauce (any flavor)

Fajitas
I don't have a recipe for this... I just grill some chicken, then add some julienned peppers and onions. Add lime juice, garlic and some taco seasoning. Serve on warm flour tortillas with cheese, sour cream and lots of guac!

Mandarin Chicken
(strikingly similar to the Panda Express version!)
Grill 1 lb. plain chicken (boneless skinless breasts or thighs) on BBQ while you make the following sauce:
2/3 c. sugar
1/4 c. soy sauce
1 T. lemon juice
1 t. vegetable oil
1 t. minced garlic
1 t. minced ginger
1/4 c. water
1 1/2 T. cornstarch
Mix first six ingredients in a saucepan. Combine water and cornstarch, mix well and add to saucepan. Bring to boil, stirring often. Reduce and simmer 5-10 minutes. Remove chicken from grill, (carefully) slice it into bite size pieces. Put chicken in bowl and cover with sauce. Serve over steamed rice.

Ceasar Steak Kabobs
(from my cousin Heidi who blogs here)
1 green pepper
12 plum tomatoes
1 onion
12 small red potatoes (or larger ones cut in half)
1 lb. steak, cut into cubes
1 c. ceasar dressing
Cook potatoes until soft (don't overboil or they will be mushy on your sticks.) Pour 1/3 c. dressing into ziploc bag with steak. Cut veggies into 1" pieces and put into a bowl with the potatoes. Pour remaining dressing over to coat veggies. String veggies, potatoes and steak onto kabob sticks. Cook on grill over med high heat, turning once. Remove from grill when meat is cooked through.

Wow...ask and ye shall recieve. These recipes sound yummy! I will try to get a few of my easy favorites together and put them on my blog. Check over the next few days.

Love the idea of this Christy. I have been working on a similar monthly system but haven't quite mastered it yet. If I had more time I would be tempted to start an "quick and easy meals" blog that people could contribute to! I am always looking for ways to please the palates of my family while making easy meals.
